I got a "A" code 289 (complete) in trade here a couple of years ago. It had sar outside, uncovered for several years, and the valve covers are pitted and crappy looking. Is there anything that can be done to restore them? Or should I just plan on replacing them? They are the buddy bar open letter "COBRA" ones, and I have always liked those best on a 289...

If they are the type which have brushed finish on the raised parts, you can reproduce that with a beltsander and the right grit paper. Pitting in the polished parts can only be taken down until the pits are gone and then brought back to a shine by using progressively finer paper and then polishing. If the pits are too deep for that, they are pretty much toast except perhaps for filling and then powder coating or the like.
